It’s July! With juicy blackcurrants currently in abundance this is the perfect time for picking and creating tasty treats using these highly nutritious berries.
Blackcurrants are a delicious and versatile superfood that you can eat fresh or use in a variety of recipes, including jams, jellies, and baked goods. These berries are packed with vitamins and nutrients, which provide many health benefits. So, if you’re looking for a tasty and nutritious addition to your diet, give this tried and tested recipe for Blackcurrant Jam, a go!
You only need a few ingredients and most can be purchased from Ballykenver Farmshop & Kitchen in Armoy – run by Amanda Hanna.
Ingredients:
- 2kg of blackcurrants
- 1600g of jam sugar
- Juice of 2 lemons
Method:
Mix all the ingredients in your maslin jam making pan over a low heat, stirring gently.
After 3-4mins raise the heat to high and pop your temperature probe in the pan.
As the mixture simmers, scrape any sugar from the sides back into your jam.
When the jam comes to a rolling boil that cannot be stirred down check the temperature and cook, stirring until the temperature reaches 105 degrees C.
The jam is ready when a small drop placed on a cold plate forms a skin and wrinkles when you push your finger through it.
Pot into prepared jars and seal immediately. Delicious on hot buttered toast, scones and mixed with fresh yogurt.
